  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. Prepare Your Ingredients: Clean and slice the mushrooms. Finely chop the onion or shallots and mince the garlic. Warm the broth on the stove to ensure even rice cooking.
  2. Sauté Mushrooms: Heat olive oil and a bit of butter in a large pan over medium heat. Add mushrooms and cook until golden brown and their moisture has evaporated, about 5-7 minutes. Season with salt and set aside.
  3. Cook the Aromatics: In the same pan, add more olive oil if needed. Sauté onions or shallots until translucent, then add garlic and cook until fragrant, about 2 minutes.
  4. Toast the Rice: Add arborio rice to the pan and stir well to coat each grain in oil. Cook until the edges become slightly translucent, about 2 minutes, developing creaminess later.
  5. Deglaze with Wine: Pour in white wine and stir until mostly absorbed by the rice, imparting subtle tang and depth.
  6. Add Broth Gradually: Add warm broth one ladle at a time, stirring constantly. Allow each addition to be mostly absorbed before adding more. Continue for 18-20 minutes until rice is tender but with slight bite.
  7. Combine Mushrooms and Finish: Stir in the sautéed mushrooms, butter, and Parmesan cheese. Adjust seasoning with salt and pepper. Garnish with fresh parsley if desired, and serve immediately.
