Ingredients

Scale

Main Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese (preferably freshly grated)
  • 1 cup Panko breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil or butter (for frying)

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with paper towels to help the coating stick properly. If the breasts are thick, carefully slice them horizontally to create thinner cutlets, which cook quickly and evenly.
  2. Mix the Coating: In a shallow bowl, combine grated Parmesan cheese, Panko breadcrumbs, garlic powder, dried Italian herbs, salt, and pepper. In a separate bowl, beat the eggs thoroughly to use as a binder.
  3. Coat the Chicken: Dip each chicken breast into the beaten eggs, allowing excess to drip off. Dredge the chicken in the Parmesan-breadcrumb mixture, pressing firmly to ensure an even coating. For extra crunch, repeat the egg and breadcrumb coating one more time.
  4. Cook to Perfection: Heat olive oil or butter in a skillet over medium heat. Add the coated chicken breasts and cook for 4-5 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Alternatively, place the coated chicken on a greased baking sheet and bake in a preheated oven at 400°F (200°C) for 20-25 minutes.
  5. Rest and Serve: Transfer the cooked chicken breasts to a plate and let rest for a few minutes to lock in juices. This makes the chicken tender and easier to slice before serving.

Notes

  • Use freshly grated Parmesan cheese for a richer, crispier crust.
  • Always pat chicken dry before coating to prevent sogginess and improve adhesion.
  • Maintain medium heat during cooking to avoid burning the crust while achieving a golden color.
  • Pound chicken breasts to an even thickness for consistent cooking.
  • Rest the chicken after cooking to keep it juicy and make slicing easier.
  • For extra crispiness, double dip the chicken in the egg and breadcrumb mixture.
