Instructions

  1. Prepare the dry ingredients: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin. In a large bowl, whisk together the all-purpose flour, baking powder, Italian seasoning, salt, and pepper to evenly distribute all the dry ingredients.
  2. Mix the wet ingredients: In a separate bowl, beat the egg with milk and olive oil. Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined to avoid overmixing, which can toughen the muffins.
  3. Add cheese and toppings: Fold the shredded mozzarella cheese and pizza sauce into the batter. Then stir in your choice of diced pepperoni or vegetables, making sure everything is evenly spread throughout.
  4. Fill the muffin cups: Divide the batter evenly into the prepared muffin tin, filling each cup about three-quarters full. This ensures a nice rise without overflow.
  5. Bake until golden: Bake in the preheated oven for about 18-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean. Let them cool slightly before removing from the tin.
