Ingredients

Scale

Tortilla Base

  • Thick-cut sturdy tortilla chips (enough to cover a large baking sheet)

Pulled Pork Layer

  • 3 cups tender, slow-cooked pulled pork (homemade or store-bought)
  • Optional: 1/2 cup spicy BBQ sauce for mixing with pulled pork

Additional Toppings

  • 1 cup cooked black beans
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese

Fresh Garnishes

  • 1 cup fresh salsa (made with ripe tomatoes, onions, cilantro, and a touch of lime)
  • 1/4 cup sliced jalapeños (optional, for heat)
  • 1 avocado or 1/2 cup guacamole
  • 1/2 cup sour cream
  • Fresh cilantro leaves for garnish

Instructions

  1. Prepare Your Pulled Pork: Warm the pulled pork thoroughly, mixing it with smoky seasonings or your favorite barbecue sauce if desired to enhance flavor and juiciness.
  2. Arrange the Tortilla Chips: Spread a generous and even layer of sturdy tortilla chips on a large baking sheet or oven-safe platter to create a crunchy base.
  3. Add Layers of Pulled Pork and Beans: Distribute the warm pulled pork evenly over the chips, then sprinkle the cooked black beans to build hearty layers.
  4. Sprinkle the Cheese: Cover the toppings generously with a mixture of shredded cheddar and Monterey Jack cheese to ensure gooey, melted coverage.
  5. Bake Until the Cheese Melts: Place the assembled nachos in a preheated oven at 350°F (175°C) for 10 to 15 minutes until the cheese is melted and bubbling.
  6. Add Fresh Salsa and Garnishes: Remove the nachos from the oven and top with fresh salsa, sliced jalapeños, dollops of sour cream or guacamole, and sprinkle fresh cilantro for color and a fresh flavor kick.

Notes

  • Use thick-cut tortilla chips to prevent sogginess under the toppings.
  • Warm pulled pork thoroughly before assembling to help cheese melt evenly.
  • Layer chips, pork, beans, and cheese alternately for balanced flavor in every bite.
  • Do not overbake; bake just enough to melt the cheese to maintain chip crunchiness.
  • Add fresh garnishes after baking to preserve their brightness and texture.
  • Leftover pulled pork can be refrigerated for up to 3 days or frozen for up to 3 months; keep chips separate to maintain crispness.
  • This recipe is easily customizable with variations like vegetarian substitutes, different cheeses, or gluten-free ingredients.
