Instructions

  1. Prep and Parboil the Potatoes: Wash and cut the potatoes into even-sized chunks. Parboil them in salted water for 8 to 10 minutes until just tender but not fully cooked. Drain well.
  2. Brown the Butter: Melt unsalted butter in a saucepan over medium heat, swirling occasionally. When it turns golden brown with nutty aroma, remove from heat immediately.
  3. Toss Potatoes with Oil, Herbs, and Seasoning: Gently shake drained potatoes to roughen edges. Toss them in a large bowl with olive oil, fresh herbs, crushed garlic, salt, and pepper.
  4. Roast Until Golden and Crispy: Spread potatoes in a single layer on a lined or greased baking sheet. Roast in a preheated oven at 425°F (220°C) for 25 to 30 minutes, flipping halfway through for even browning.
