Instructions

  1. Prepare the Potatoes: Wash and peel the potatoes if desired, then cut them into evenly sized chunks about 1 to 1.5 inches to ensure consistent cooking and crispiness.
  2. Parboil for Tenderness: Place the potato chunks into boiling salted water and cook for 5 to 7 minutes until just tender but not falling apart. This softens the inside, ensuring a fluffy texture after roasting.
  3. Drain and Rough Up: Drain the potatoes well, then gently shake them in the pot or colander to roughen the edges, which helps create extra crispiness while roasting.
