Instructions

  1. Activate the Yeast: Dissolve the active dry yeast and sugar in warm water (about 110°F). Let it sit for 5 to 10 minutes until frothy, signaling the yeast is active.
  2. Prepare the Dough: In a large bowl, combine the flour, salt, minced rosemary, and garlic. Add the yeast mixture along with melted butter or olive oil, and milk if using. Stir until a sticky dough forms.
  3. Knead the Dough: Transfer onto a floured surface and knead for 8 to 10 minutes until smooth, elastic, and less sticky. Kneading develops gluten for a light, airy texture.
  4. First Rise: Place dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
  5. Shape the Rolls: Punch down the dough gently and divide into 12 equal portions. Shape each into a smooth ball and nestle close together in a greased baking pan.
