Ingredients

Scale

For the Crust

  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar, packed
  • 1 teaspoon baking powder
  • ½ cup (1 stick) cold unsalted butter, cut into pieces

For the Filling

  • 3 large eggs
  • 1 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt flakes, plus extra for topping
  • 1 ½ cups chopped pecans (lightly toasted if desired)

Instructions

  1. Prepare the Crust: In a mixing bowl, combine the all-purpose flour, brown sugar, and baking powder. Cut in the cold, unsalted butter until the mixture resembles coarse crumbs. Press this mixture evenly into a lined 8×8 or 9×9 inch baking pan. Bake at 350°F (175°C) for 12-15 minutes until the crust is set but not browned.
  2. Make the Filling: In a separate bowl, whisk together the eggs, pure maple syrup, vanilla extract, and sea salt flakes until smooth. Stir in the chopped pecans to distribute evenly throughout the filling.
  3. Assemble and Bake: Pour the pecan and maple filling evenly over the pre-baked crust. Smooth the top gently and sprinkle a few sea salt flakes on the surface for the signature salted touch. Return to the oven and bake at 350°F (175°C) for 25-30 minutes, or until the filling is set but still slightly gooey in the center.
  4. Cool and Slice: Remove the bars from the oven and allow them to cool completely in the pan. For cleaner slices, chill the bars in the refrigerator for at least 1 hour before cutting into squares or rectangles. Serve and enjoy.

Notes

  • Use high-quality pure maple syrup to ensure the best flavor.
  • Keep butter and dough chilled for a flakier crust.
  • Do not overmix the filling to maintain a dense, gooey texture.
  • Lightly toast pecans before adding to enhance their flavor.
  • Warm a sharp knife under hot water and dry it for neat, clean slices.
