Instructions

  1. Prepare the Filling: Cook your fillings by lightly scrambling the eggs, sautéing vegetables, and crisping any meats if using. Season with salt, pepper, and fresh herbs to build layers of flavor.
  2. Roll Out the Dough: On a lightly floured surface, roll the puff pastry or pie crust dough to about 1/4 inch thickness. Cut into equal squares or circles depending on your preferred pie size and shape.
  3. Assemble the Pies: Place a spoonful of filling at the center of each dough piece. Fold the dough over to enclose the filling, forming a pocket. Press the edges firmly with a fork to seal and prevent leaking during baking.
  4. Brush with Egg Wash: Use the beaten egg to brush the tops of each hand pie for a glossy, golden finish once baked.
