Ingredients

Scale

Main Ingredients

  • 100g soba noodles (preferably 100% buckwheat for gluten-free)
  • 1½ tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, freshly minced
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds

Optional Ingredients

  • Shredded carrots, cucumbers, or bell peppers (to taste)
  • Grilled chicken, tofu, or shrimp (for protein boost)
  • Chili flakes or sriracha (for spicy kick)
  • Snap peas, baby spinach, or shredded cabbage (for veggie medley)

Instructions

  1. Cook the Soba Noodles: Bring a large pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-5 minutes. Drain and rinse them under cold water to stop the cooking process and prevent sticking.
  2. Prepare the Sesame Sauce: In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey (or maple syrup), and freshly minced garlic until smooth and well combined. This creates the flavorful sauce base.
  3. Toss Noodles and Sauce: Place the cooled soba noodles in a large mixing bowl, pour the sesame sauce over them, and toss gently but thoroughly to coat each strand evenly with the nutty glaze.
  4. Add Fresh Ingredients: Fold in chopped green onions, toasted sesame seeds, and any optional veggies or proteins to add texture, color, and extra nutrition.
  5. Serve and Enjoy: Transfer the noodles to serving bowls or plates and serve immediately. Optionally, chill in the fridge for 15 minutes for a refreshing cold soba salad.

Notes

  • Avoid overcooking soba noodles to keep their chewy texture.
  • Rinse noodles with cold water to prevent clumping.
  • Toast sesame seeds lightly in a dry pan to enhance their flavor.
  • Prepare sesame sauce in advance to save time.
  • Adjust honey/maple syrup and rice vinegar to balance sweetness and tang as desired.
