Instructions

  1. Prep the beef: Trim any excess fat from the chuck roast and season generously with salt, pepper, cumin, chili powder, paprika, and oregano. This primes the meat for slow cooking and ensures deep flavor absorption.
  2. Cook low and slow or pressure cook: Place the seasoned beef, chopped onion, garlic, and beef broth into a slow cooker or pressure cooker. Cook on low for 8 hours or on high pressure for about 60 minutes until the beef is fall-apart tender.
  3. Shred the beef: Remove the beef from the cooking liquid and shred it using two forks. Mix shredded beef with some of the reserved cooking juices to keep it moist and flavorful.
  4. Warm the tortillas: Heat the flour tortillas in a skillet or microwave until they are warm and pliable, which makes them easier to roll without tearing.
  5. Assemble the burritos: Lay a warm tortilla flat and add a generous scoop of shredded beef. Layer with your choice of toppings such as shredded cheese, salsa, and sour cream. Wrap the tortilla tightly around the fillings to form a burrito.
