Skillet Chicken Vegetables

A quick and healthy one-pan meal combining tender chicken with a vibrant mix of fresh vegetables, seasoned with garlic, herbs, and olive oil for a flavorful, nutritious, and colorful dinner ready in under 30 minutes.

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces

Vegetables

  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced

Seasonings & Oils

  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh herbs (parsley or thyme), chopped

Instructions

  1. Prepare the chicken: Cut the chicken into bite-sized pieces to ensure even cooking and easy eating. Season lightly with salt and pepper to enhance natural flavors.
  2. Sauté garlic and chicken: Heat olive oil in your skillet over medium-high heat. Add minced garlic and cook until fragrant, about 30 seconds. Then add chicken pieces and cook until golden brown on all sides, approximately 5–7 minutes.
  3. Add vegetables: Add chopped bell peppers, zucchini, and cherry tomatoes to the skillet. Stir everything together and cook for about 5 minutes until vegetables soften but retain some crunch.
  4. Season and finish with herbs: Sprinkle salt, pepper, and your choice of fresh herbs evenly over the skillet mixture. Stir gently and cook for another 2 minutes to meld the flavors beautifully.

Notes

  • Preheat your skillet to ensure a nice sear on the chicken for maximum flavor.
  • Don’t overcrowd the pan; cook in batches if needed to avoid steaming veggies instead of sautéing.
  • Use fresh garlic for the best aroma and flavor.
  • Cut veggies uniformly for even cooking and consistent texture.
  • Finish with herbs off heat to protect delicate flavors.
