Instructions

  1. Prepare and Season the Beef: Pat the beef roast dry with paper towels. Generously season all sides with salt and black pepper to bring out natural flavors.
  2. Sear the Roast: Heat olive oil in a large skillet over medium-high heat. Brown all sides of the beef for 3-4 minutes each to lock in juices and create a caramelized crust.
  3. Prepare the Slow Cooker Base: Place chopped onions, whole garlic cloves, rosemary, and thyme at the bottom of the slow cooker. Pour in beef broth and Worcestershire sauce to form the cooking liquid.
  4. Add the Roast and Optional Vegetables: Position the seared roast on top of the onion and herb mixture. Arrange carrots and potatoes around the roast if using, so they absorb the savory juices.
  5. Cook Low and Slow: Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours until the beef is fork-tender and easily slices apart. Avoid lifting the lid frequently to prevent heat loss.
  6. Rest and Slice: Remove the roast carefully and let it rest for 15 minutes to allow juices to redistribute, ensuring moist and tender slices.
