Instructions

  1. Prep and Boil the Broccoli: Wash the broccoli and trim the stalks. Boil the broccoli crowns in salted water for 8 to 10 minutes until tender but still firm to the touch, making sure not to overcook to prevent mushiness.
  2. Smash the Broccoli: Drain the broccoli well and transfer to a sturdy cutting board or baking tray. Using the bottom of a glass or a potato masher, gently press each crown to flatten it until it splits open but stays in one piece, creating a larger surface area for roasting.
  3. Season and Oil: Drizzle olive oil generously over each smashed broccoli piece. Sprinkle the minced garlic, sea salt, and black pepper evenly on top, ensuring the broccoli is well coated in oil to promote browning during roasting. Add red pepper flakes if using.
  4. Roast to Perfection: Preheat the oven to 425°F (220°C). Arrange the broccoli on a baking sheet lined with parchment paper, spreading pieces evenly. Roast for about 20 minutes, flipping halfway through, until the edges turn crispy and golden brown.
  5. Add Parmesan and Finish Roasting: Five minutes before the roasting time ends, evenly sprinkle freshly grated Parmesan cheese over each broccoli piece. Return to the oven just long enough for the cheese to melt and form a crispy, golden crust.
