Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts or thighs

Rice

  • 1 cup long-grain white rice

Aromatics

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced

Liquids

  • 3 cups chicken broth

Thickening & Fat

  • 3 tablespoons all-purpose flour (or gluten-free flour blend for GF option)
  • 2 tablespoons butter or oil

Seasonings

  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Garnish (optional)

  • Fresh parsley, chopped

Instructions

  1. Prepare Your Ingredients: Pat the chicken dry and generously season both sides with salt, pepper, and paprika. Finely chop the onion and mince the garlic. Measure out rice and chicken broth so all ingredients are ready when you start cooking.
  2. Brown the Chicken: Heat butter or oil in a large skillet over medium heat. Add the chicken pieces and cook until golden brown on both sides, approximately 4-5 minutes per side. Remove the chicken from the skillet and set aside to lock in flavor and texture.
  3. Sauté Onions and Garlic: In the same skillet, add the chopped onions and minced garlic. Cook for about 3 minutes, stirring frequently until softened and fragrant without burning.
  4. Make the Gravy Base: Sprinkle the flour over the softened onions and garlic, stirring constantly to prevent lumps. Cook the flour for about 1 minute to eliminate raw flour taste and help thicken the gravy later.
  5. Add Broth and Rice: Slowly pour in the chicken broth while whisking gently to combine with the roux. Stir in the rice ensuring it is evenly distributed within the liquid.
  6. Combine and Simmer: Return the browned chicken to the skillet, nestling it into the rice mixture. Cover the pan with a tight-fitting lid, reduce the heat to low, and let it simmer gently for 20-25 minutes until the rice is tender and the chicken is cooked through.
  7. Finish and Serve: Remove the skillet from heat and allow the dish to rest for 5 minutes to thicken the gravy further. Garnish with freshly chopped parsley before serving.

Notes

  • Use bone-in chicken pieces for more flavor, increasing cooking time as needed.
  • Do not rush browning the chicken to ensure a rich, golden crust that locks in juices.
  • Maintain the correct broth-to-rice ratio to avoid mushy or undercooked rice.
  • Cover the skillet tightly during simmering to allow even cooking with steam.
  • Allow the dish to rest after cooking to let flavors meld and gravy thicken.
