Ingredients

Scale

Chicken & Skewers

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized cubes
  • 810 bamboo skewers, soaked in water for at least 30 minutes

Bang Bang Sauce

  • 1/2 cup mayonnaise (use gluten-free mayonnaise if needed)
  • 23 tablespoons sriracha sauce (adjust for desired heat)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon garlic powder
  • 1 tablespoon rice vinegar or lime juice
  • Salt and pepper, to taste

Garnishes (optional)

  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • Chopped cilantro or parsley (optional)

Instructions

  1. Prepare the Chicken: Cut the boneless, skinless chicken into uniform, bite-sized cubes to ensure even cooking and better sauce absorption.
  2. Skewer the Chicken: Thread the chicken pieces onto pre-soaked bamboo skewers, leaving small gaps between each piece for heat circulation and a nice char.
  3. Make the Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, sriracha, honey, garlic powder, and rice vinegar or lime juice until smooth. Season with salt and pepper, then taste to adjust the balance of spicy, sweet, and tangy.
  4. Grill the Skewers: Preheat your grill or grill pan to medium-high heat. Grill the chicken skewers for about 4-5 minutes per side or until fully cooked and nicely browned, reaching an internal temperature of 165°F.
  5. Coat and Serve: Remove the skewers from the grill and generously brush or drizzle the bang bang sauce over the warm chicken. Garnish with sliced green onions, toasted sesame seeds, and optional fresh herbs. Serve immediately and enjoy!

Notes

  • Marinate the chicken in half the bang bang sauce for 30 minutes before grilling for enhanced flavor.
  • Leave space between chicken pieces on skewers to ensure even cooking and better charring.
  • Use a meat thermometer to confirm the chicken reaches 165°F internally for safety.
  • Brush the sauce onto the skewers halfway through grilling and again before serving to layer flavors.
  • Soak bamboo skewers thoroughly to prevent burning during grilling.
