  • Soft burger buns (or gluten-free buns)
  • Fresh lettuce leaves or shredded slaw
  • Optional toppings: sliced pickles, jalapeños, cheese (pepper jack or smoked gouda), fresh cilantro or parsley

Instructions

  1. Prepare the Chipotle Aioli: In a small bowl, whisk together mayonnaise, finely chopped chipotle peppers in adobo sauce, minced garlic, and lime juice. Season with salt and pepper to taste. Chill in the refrigerator until ready to use.
  2. Make the Spicy Chicken Patty Mixture: In a mixing bowl, combine ground chicken with breadcrumbs, egg, paprika, cumin, chili powder, salt, and pepper. Mix gently until all ingredients are incorporated, being careful not to overwork the mixture.
  3. Form and Chill the Patties: Shape the mixture into evenly sized patties about three-quarters of an inch thick. Place them on a plate and refrigerate for at least 15 minutes to help them hold together during cooking.
  4. Cook the Burgers: Preheat a grill, skillet, or grill pan over medium-high heat. Cook the chicken patties for 4 to 5 minutes on each side, or until they reach an internal temperature of 165°F and develop a golden-brown crust.
  5. Assemble the Burgers: Lightly toast the burger buns. Layer each bun with a lettuce leaf or slaw, then place the hot chicken patty on top. Add a generous dollop of chipotle aioli and any optional toppings you prefer. Serve immediately.
