Ingredients

Scale

Chicken and Marinade

  • 2 boneless, skinless chicken breasts or thighs
  • 1 cup buttermilk
  • 2 tablespoons hot sauce (adjust to taste)

Coating

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Sandwich Assembly

  • 4 brioche buns, toasted lightly
  • Mayonnaise or spicy aioli, as desired
  • Fresh lettuce leaves
  • Tomato slices

Instructions

  1. Marinate the Chicken: Combine buttermilk and hot sauce in a bowl to create a spicy marinade. Submerge the chicken pieces, cover, and refrigerate for at least 2 hours or overnight to tenderize and infuse heat.
  2. Prepare the Spicy Coating: In a large shallow dish, mix flour, cornstarch, paprika, cayenne pepper, garlic powder, salt, and black pepper to create a crispy, flavorful crust.
  3. Dredge the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Coat each piece thoroughly in the seasoned flour mixture, pressing gently to help the coating stick.
  4. Fry the Chicken: Heat oil in a deep pan or fryer to 350°F (175°C). Fry chicken in batches without overcrowding for about 6-8 minutes or until golden brown and cooked through. Drain on paper towels to maintain crispness.
  5. Assemble Your Sandwich: Toast the brioche buns lightly, spread mayonnaise or spicy aioli on both halves, layer the fried chicken, then fresh lettuce and tomato slices. Top with the bun and serve immediately.

Notes

  • Use buttermilk to tenderize the chicken and add subtle tang.
  • Mixing cornstarch with flour gives the crust extra crispiness and a light texture.
  • Maintain oil temperature at around 350°F to avoid greasy, soggy chicken.
  • Press coating firmly onto chicken pieces for maximum crunch.
  • Let fried chicken rest on paper towels briefly to retain crispness.
