Ingredients

Scale

Filling Ingredients

  • 2 cups fresh spinach (or thawed and drained frozen spinach)
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream or Greek yogurt
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Base

  • 6 large flour tortillas or 1 package crescent roll dough

Instructions

  1. Prepare the Spinach Filling: Sauté fresh spinach until just wilted, then drain thoroughly to remove excess moisture. In a mixing bowl, combine the softened cream cheese, sour cream or Greek yogurt, shredded cheese, garlic powder, salt, and pepper. Fold in the cooled spinach until evenly incorporated to form a smooth, creamy filling.
  2. Spread the Filling: Lay the flour tortillas or crescent roll dough flat on a clean work surface. Evenly spread the spinach dip filling over each tortilla or the entire sheet of crescent dough, covering the surface completely to ensure each bite is flavorful.
  3. Roll and Slice: Starting from one edge, carefully roll the dough or tortilla tightly into a log shape. Chill the rolled log in the refrigerator for 15-20 minutes to firm up, then use a sharp knife to slice into 1 to 1.5 inch thick pinwheels for ideal bite-size portions.
  4. Bake or Chill: Arrange the pinwheels on a parchment-lined baking sheet. If using crescent roll dough, bake according to package instructions until golden brown and puffy, usually 12-15 minutes at 375°F (190°C). For tortillas, you may bake briefly to warm them through or serve chilled as preferred. Both options yield delicious results.

Notes

  • Drain spinach exceptionally well to avoid soggy pinwheels.
  • Use softened cream cheese for easy spreading and even filling.
  • Chilling the rolled log before slicing ensures cleaner, neater pinwheels.
  • Watch baking time closely to prevent drying out or overbrowning.
  • Serve fresh for best texture and flavor.
