Instructions

  1. Prepare Your Ingredients: Slice the steak thinly across the grain for tenderness. Core and slice the bell peppers into thin strips. Mince the garlic and grate fresh ginger to have everything ready for quick cooking.
  2. Sear the Steak: Heat oil in a large skillet or wok over medium-high heat. Add the steak strips in a single layer to get a nice sear, cooking about 2 minutes per side until lightly browned but not fully cooked. Remove the steak from the pan and set aside.
  3. Sauté the Peppers: Add more oil if needed, then toss in the bell peppers. Stir fry for 3-4 minutes until they start to soften but still retain some crunch, creating a perfect texture contrast to the tender steak.
  4. Make the Sauce and Combine: Add garlic and ginger to the peppers, sautéing until fragrant, about 30 seconds. Return the steak to the pan. Pour in soy sauce and stir everything together, allowing flavors to meld. If desired, stir in the cornstarch mixture to thicken the sauce slightly.
