Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions until just al dente. Drain and set aside, reserving a small amount of pasta water if you wish to loosen the sauce later.
  2. Make the Roux: In the same pot or a separate saucepan, melt the butter over medium heat. Sprinkle in the flour and whisk constantly for 1-2 minutes until the mixture turns a light golden color, which removes the raw flour taste and forms the base of the sauce.
  3. Add Milk and Thicken: Gradually pour in the whole milk while whisking continuously to prevent lumps. Cook the sauce, stirring often until it thickens to a creamy consistency, about 4-5 minutes.
  4. Melt in the Cheese: Lower the heat and add the shredded cheddar cheese a handful at a time, stirring after each addition until fully melted. Season the sauce with salt, black pepper, and optional mustard powder to taste.
  5. Combine Pasta and Cheese Sauce: Return the cooked macaroni to the cheese sauce, tossing gently to coat every piece evenly. Adjust the sauce thickness with reserved pasta water if needed. Serve immediately.
