Ingredients

Scale

Fresh Ingredients

  • 1 cup fresh strawberries, washed and diced
  • 4 ounces cream cheese, softened
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar

Wet Ingredients

  • 2 large eggs, room temperature
  • 1/2 cup unsalted butter, melted (or oil)
  • 3/4 cup milk or buttermilk

Instructions

  1. Prepare the Strawberry and Cream Cheese Mixture: Wash and dice fresh strawberries into small pieces. In a bowl, mix softened cream cheese with sugar (about 1 tablespoon) and vanilla extract until smooth to create the cheesecake swirl.
  2. Mix the Dry Ingredients: In a large bowl, combine all-purpose flour, baking powder, and salt. Whisk together to ensure even distribution and proper rising during baking.
  3. Combine Wet Ingredients: In another bowl, beat the eggs, sugar, melted butter (or oil), milk, and vanilla extract until well blended, making the muffins tender and flavorful.
  4. Fold Wet and Dry Ingredients Together: Gradually add the dry ingredients into the wet mixture, folding gently until just combined. Take care not to overmix to keep the batter light and fluffy.
  5. Add Strawberries and Prepare Batter for Baking: Gently fold the diced strawberries into the batter, distributing evenly for bursts of flavor in every muffin.
  6. Add Cream Cheese Swirls: Fill muffin cups halfway with batter, spoon a dollop of the cream cheese mixture on top, and swirl lightly using a skewer or knife. Add more batter to fill each cup three-quarters full to create beautiful marbling.
  7. Bake to Perfection: Preheat oven to 350°F (175°C). Bake muffins for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before removing from the pan.

Notes

  • Use fresh berries for best texture and flavor.
  • Do not overmix the batter to avoid dense muffins.
  • Use room temperature eggs, butter, and cream cheese for smooth mixing.
  • Swirl the cream cheese lightly to maintain distinct cheesecake swirls.
  • Start checking baking time a few minutes early as ovens can vary.
