For the Chocolate Shell
- 200g high-quality chocolate (bittersweet or couverture, finely chopped)
For the Strawberry Cream Filling
- 150g fresh strawberries, washed and pureed
- 60ml heavy cream
- 20g unsalted butter
- 30g powdered sugar
- 1 tsp lemon juice
- 1 tsp vanilla extract
- Prepare the Strawberry Cream Filling: Wash and finely puree the fresh strawberries. In a small saucepan, gently heat the strawberry puree with heavy cream, butter, powdered sugar, lemon juice, and vanilla extract, stirring frequently until smooth and slightly thickened. Remove from heat and refrigerate until completely cooled to help the filling maintain its shape.
- Temper the Chocolate: Chop chocolate into small, even pieces. Melt two-thirds of the chocolate using a double boiler or in short microwave bursts, stirring constantly. Add the remaining chocolate, stirring to cool and encourage proper crystallization. Properly tempered chocolate should be shiny with a firm snap once set.
- Mold the Chocolate Shells: Pour a thin layer of tempered chocolate into each cavity of a silicone or candy mold. Swirl to coat the sides evenly, then invert the mold to drain excess chocolate. Refrigerate for a few minutes until the shells are firm.
- Fill the Chocolates: Using a spoon or piping bag, carefully fill each chocolate shell with the chilled strawberry cream mixture, leaving some space at the top for sealing with chocolate.
- Seal the Chocolates: Top off the filled molds with more tempered chocolate, smoothing the surface with a spatula or the back of a spoon. Chill until completely set. Once fully hardened, carefully unmold your Strawberry Cream Chocolates.
