Instructions

  1. Cook the Sago Pearls: Rinse the sago pearls under cold water. Bring a pot of water to a boil, then add the sago in small portions to prevent sticking. Cook for 10-15 minutes, stirring frequently until the pearls turn translucent and chewy. Drain and rinse under cold water to remove excess starch.
  2. Prepare the Coconut Milk Mixture: Gently heat the coconut milk in a saucepan over low heat. Add a pinch of salt and sugar, stirring until the sugar dissolves completely. Stir in vanilla extract if using. Avoid boiling to prevent curdling; warm just enough to blend ingredients.
  3. Combine Sago and Coconut Milk: Transfer the cooked sago pearls into the warm coconut milk mixture. Stir gently until well combined. Allow the mixture to cool slightly if you prefer it chilled or keep warm if serving immediately.
  4. Add Fresh Strawberries: Fold the sliced fresh strawberries into the sago and coconut milk blend gently. Reserve some strawberry slices for garnishing if desired.
  5. Chill and Serve: Refrigerate the dessert for at least 1 hour for best flavor and texture. Serve chilled, garnished with reserved strawberries, mint leaves, or toasted coconut flakes if desired.
