Ingredients

Scale

Chicken and Marinade

  • 1 lb chicken breast or thighs
  • 2 tbsp olive oil
  • 1 tbsp lime juice (freshly squeezed)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper, to taste

Street Corn Mixture

  • 2 ears fresh corn, grilled or roasted and kernels cut off
  • 1/4 cup mayonnaise
  • 1 tbsp lime juice (freshly squeezed)
  • 1/2 tsp chili powder
  • Pinch of salt

Assembly and Garnishes

  • 8 soft corn or flour tortillas
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup cotija cheese, crumbled
  • Lime wedges, for serving

Optional Spices & Extras

  • Additional chili powder, cumin, paprika as desired
  • Diced jalapeños or hot sauce (for spicy kick)
  • Toasted pepitas or crispy fried onions (for extra crunch)

Instructions

  1. Marinate the Chicken: Combine olive oil, lime juice, chili powder, cumin, paprika, salt, and pepper in a bowl and coat the chicken thoroughly. Let it marinate for at least 30 minutes to allow the flavors to penetrate deeply.
  2. Grill the Chicken: Heat your grill or skillet over medium-high heat and cook the chicken for about 5-7 minutes per side until nicely browned and cooked through. Once done, let it rest before slicing into strips.
  3. Prepare the Street Corn: Grill or roast fresh corn on the cob until lightly charred. Cut the kernels off and mix them with mayonnaise, lime juice, chili powder, and a pinch of salt to create the creamy street corn mixture.
  4. Assemble the Tacos: Warm the tortillas, then layer on sliced grilled chicken, the creamy street corn mixture, crumbled cotija cheese, and fresh cilantro leaves. Add extra lime wedges on the side for squeezing.
  5. Serve and Enjoy: Serve immediately while warm and enjoy the vibrant flavors and textures in every bite.

Notes

  • Marinate Longer: For deeper flavor, marinate the chicken overnight if possible.
  • Grill Corn on the Cob: Grilling corn adds a smoky dimension that canned corn can’t replicate.
  • Use Fresh Lime Juice: Freshly squeezed lime juice brightens the dish unlike bottled varieties.
  • Warm Tortillas Properly: Heat tortillas in a dry skillet or wrapped in foil to keep them soft and pliable.
  • Don’t Overcrowd the Pan: Cook chicken in batches for even browning and juicy meat.
