  • 1/3 cup grated Parmesan cheese
  • 2 tbsp fresh basil, chopped
  • Pinch of red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels, then season both sides generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat, and sear the salmon skin-side down for about 4-5 minutes until crispy and golden. Flip carefully and cook an additional 2-3 minutes, then remove from the pan and set aside.
  2. Make the Sun-Dried Tomato Sauce: In the same skillet, add a little more olive oil if needed, then sauté minced garlic until fragrant, about 30 seconds to 1 minute. Add finely chopped sun-dried tomatoes and cook for 1 more minute to release their deep flavor. Pour in the heavy cream and bring gently to a simmer.
  3. Add Parmesan and Basil: Stir in grated Parmesan cheese until the sauce thickens and becomes creamy. Season with salt, pepper, and a pinch of red pepper flakes if desired. Finally, fold in the chopped fresh basil for brightness and fresh flavor.
