Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) whole kernel corn, drained
  • 2 tablespoons taco seasoning (chili powder, cumin, paprika, oregano blend)
  • 3 cups beef broth

Optional Toppings

  • Shredded cheese
  • Sour cream
  • Fresh cilantro
  • Diced avocado
  • Crushed tortilla chips

Instructions

  1. Brown the Meat: In a large pot over medium heat, cook the ground beef until fully browned, breaking it apart as it cooks. Drain excess fat but keep some for flavor.
  2. Sauté Aromatics: Add diced onion and minced garlic to the pot with browned beef, cooking until the onion is translucent and fragrant to build the flavor base.
  3. Add Tomatoes and Beans: Pour in tomato sauce, diced tomatoes with their juice, black beans, and corn, stirring everything together to combine well.
  4. Season and Simmer: Sprinkle in the taco seasoning and pour in beef broth. Stir to mix well, bring to a boil, then reduce heat and simmer for 20-25 minutes to meld all flavors.
  5. Taste and Adjust: Sample the soup and add salt, pepper, or additional seasoning as desired. Once heated through and flavorful, it’s ready to serve with your favorite toppings.

Notes

  • Use fresh or homemade taco seasoning for more vibrant flavors compared to pre-packaged mixes.
  • Rinse and drain canned beans partially for a thicker, less soupy consistency.
  • Simmering low and slow enhances flavor blending and depth.
  • Don’t skip the garnishes—they add essential texture and flavor contrasts.
  • Flavors improve when soup rests overnight in the refrigerator.
