Ingredients

Scale

Proteins

  • 1 lb Ground Beef or Turkey

Pasta

  • 8 oz Spaghetti Noodles, broken in halves

Seasonings & Sauce

  • 1 packet Taco Seasoning (about 2 tablespoons)
  • 1 can (14.5 oz) Diced Tomatoes with Green Chiles
  • 1 small Onion, diced
  • 3 cloves Garlic, minced
  • 2 cups Beef or Chicken Broth

Toppings

  • 1 cup Shredded Cheese (cheddar or Mexican blend)

Optional Variations

  • 1 cup cooked Lentils or Black Beans (for vegetarian option)
  • 1 Jalapeño, sliced or 1/4 tsp Cayenne Pepper (for spicier version)
  • 1 cup diced Bell Peppers, Corn, or Zucchini (extra veggies)
  • Vegan shredded cheese (for dairy-free version)
  • Shredded chicken or turkey (instead of beef)

Instructions

  1. Brown the Meat: Heat a large skillet over medium-high heat, then add your ground beef or turkey. Cook thoroughly, breaking it apart with a spatula until browned and no longer pink. Drain excess fat if desired for a leaner dish.
  2. Sauté Aromatics: Add diced onions and minced garlic to the pan with the cooked meat. Cook for about 3-4 minutes until the onions are translucent and fragrant, building that flavorful base.
  3. Stir in Taco Seasoning and Tomatoes: Sprinkle in your taco seasoning and stir well to coat the meat evenly. Pour in the canned diced tomatoes with green chiles, mixing everything to combine the spicy, tangy flavors seamlessly.
  4. Add Broth and Spaghetti: Pour in beef or chicken broth along with uncooked spaghetti broken in halves to fit the pan. Press the noodles into the sauce, ensuring they’re submerged. This allows the pasta to cook directly in the sauce, soaking up every bite of flavor.
  5. Simmer Until Pasta is Tender: Reduce heat to medium-low, cover the skillet, and let everything simmer for about 15 minutes. Stir occasionally to prevent sticking and check pasta doneness for that perfect al dente bite.
  6. Finish with Cheese: Once the spaghetti is cooked through, sprinkle shredded cheese generously on top. Cover briefly to let it melt into a creamy, gooey topping that ties the dish together beautifully.

Notes

  • Choose the right pasta: use spaghetti or thin noodles for even cooking and the best sauce absorption.
  • Don’t overcrowd the pan: use a large enough skillet to allow noodles to spread evenly in the sauce.
  • Use fresh garlic and onion for deeper flavor.
  • Adjust liquid levels if needed by adding a splash of water or broth to prevent dryness.
  • Stir halfway through cooking to prevent pasta clumping or sticking.
