Instructions

  1. Brown the Ground Beef: Heat a large skillet over medium heat, then add the ground beef, diced onions, and minced garlic. Cook until the beef is browned and the onions are translucent, breaking up the meat as it cooks.
  2. Season the Mixture: Add the taco seasoning and a splash of water to the beef mixture, stirring well to coat. Let it simmer for a few minutes so the flavors blend perfectly.
  3. Combine Beans and Tomato Sauce: Mix in the refried beans (or black beans if preferred) and tomato sauce or salsa to the beef mixture, creating a rich, flavorful filling. Stir in jalapeños or green chiles if using.
  4. Layer the Casserole: In a greased baking dish, spread the beef and bean mixture evenly at the bottom. Then, sprinkle a generous layer of shredded cheese over the mixture.
  5. Add the Tater Tots: Arrange tater tots in a single layer on top of the cheese. For extra crispiness, drizzle a little oil over them before baking if desired.
  6. Bake to Perfection: Bake the casserole in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the tater tots are golden brown and the cheese is bubbly.
