Pasta and Tuna

  • 200g cooked pasta (fusilli, penne, or elbow macaroni)
  • 1 can (approx. 150g) tuna, drained (packed in water or olive oil)

Vegetables

  • 1/2 cup chopped celery
  • 1/2 cup sweet corn kernels, drained
  • 1/4 cup thinly sliced red onion

Dressing

  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste

Herbs

  • 2 tbsp chopped fresh parsley

Instructions

  1. Cook the Pasta: Boil the pasta in salted water as per package instructions (8-10 minutes) until al dente. Drain thoroughly and rinse under cold water to stop cooking and cool the pasta.
  2. Prepare the Dressing: In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth and creamy. Adjust the seasoning to taste.
  3. Combine Ingredients: In a large bowl, add the cooled pasta, flaked tuna, chopped celery, sweet corn, and sliced red onion. Pour the dressing over and gently toss to coat all ingredients evenly.
  4. Add Fresh Herbs and Chill: Sprinkle chopped fresh parsley on top, cover the bowl, and refrigerate for at least 15 minutes to allow flavors to meld.
