Ingredients

Scale

Protein

  • 1 lb ground or diced turkey (breast or thigh)

Vegetables

  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup snap peas
  • 1 medium carrot, sliced

Teriyaki Sauce

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tbsp honey or brown sugar (or stevia/maple syrup for low sugar)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp rice vinegar or mirin
  • 1/4 cup water mixed with 1 tbsp cornstarch (cornstarch slurry)

Cooking Essentials & Garnishes

  • 1 tbsp sesame oil
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)
  • Cooked rice or noodles, for serving

Instructions

  1. Prep Your Ingredients: Wash and chop all vegetables into bite-sized pieces. If using diced turkey breast, cut into small chunks for even cooking; if ground turkey, have it ready.
  2. Make the Teriyaki Sauce: In a small bowl, whisk together soy sauce, honey (or sweetener), minced garlic, grated ginger, rice vinegar, and the cornstarch slurry (water mixed with cornstarch) to create the teriyaki glaze.
  3. Cook the Turkey: Heat a splash of sesame oil in a large skillet or wok over medium-high heat. Add turkey, season lightly with salt and pepper, and cook until browned and cooked through. Remove from pan and set aside.
  4. Stir Fry the Vegetables: Add a bit more sesame oil to the pan, then toss in the vegetables. Stir fry for 4–5 minutes until tender-crisp and vibrant.
  5. Combine and Simmer: Return the cooked turkey to the pan, pour the teriyaki sauce over the mixture, and stir well to coat. Let it simmer for 2–3 minutes until the sauce thickens and glazes the ingredients.
  6. Garnish and Serve: Sprinkle sliced green onions and toasted sesame seeds on top. Serve your Turkey Teriyaki Stir Fry over steamed rice or noodles for a complete meal.

Notes

  • Use high heat when stir-frying to sear turkey and vegetables quickly for best flavor.
  • Prep all ingredients in advance to speed up cooking time.
  • Avoid overcrowding the pan; cook in batches if necessary to prevent steaming.
  • Taste and adjust sauce sweetness or saltiness before adding to stir fry.
  • Fresh ginger offers the best flavor; avoid powdered ginger if possible.
