  • 1/2 teaspoon salt

Caramel Layer

  • About 1416 caramel candies (approx. 5 oz / 140g) or homemade caramel, softened
  • Optional: Flaky sea salt for sprinkling

Chocolate Topping

  • 1 1/2 cups (255g) semi-sweet chocolate chips or melting chocolate (milk or dark chocolate as variation)

  • 1/2 cup chopped pecans or almonds (for nutty twist)
  • Dairy-free butter, egg replacer, and vegan caramel for vegan adaptation

Instructions

  1. Prepare the Cookie Base: Begin by creaming the softened butter with both brown and granulated sugars until the mixture is light and fluffy. Beat in the eggs one at a time along with the vanilla extract. Gradually add the flour and salt, mixing gently until just combined to form a thick cookie dough that will be the sturdy yet tender base for your Twix Cookies.
  2. Press Dough into Pan: Line an 8×8 or 9×9 inch baking pan with parchment paper for easy removal. Evenly press the cookie dough firmly into the bottom of the pan creating a uniform layer that will support the caramel and chocolate toppings.
  3. Bake the Cookie Layer: Bake the dough in a preheated oven at 350°F (175°C) for about 15 minutes, or until the edges turn golden but the center remains slightly soft. Remove from the oven and allow to cool slightly before adding the caramel.
  4. Add the Caramel Layer: Unwrap caramel candies and, if needed, gently warm them to soften. Pour or spread the caramel evenly over the warm cookie base. For a salted caramel variation, sprinkle flaky sea salt on top before the chocolate layer.
  5. Melt and Spread the Chocolate: Gently melt the chocolate chips using a double boiler or microwave in short bursts, stirring often to avoid burning. Pour the melted chocolate over the caramel layer, spreading it evenly with a spatula to cover fully.
  6. Chill and Set: Refrigerate the assembled bars for at least two hours to allow caramel and chocolate layers to firm up completely. Once set, remove from the pan using the parchment paper and cut into bars or squares for serving.
