Ingredients

Scale

Main Ingredients

  • 8 oz creamy, full-bodied Brie cheese (rind removed and cubed)
  • 1 cup fresh or frozen cranberries
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1 pre-made buttery, flaky pie crust (enough for top and bottom)

Instructions

  1. Prepare the Pie Crust: Roll out your pie crust and press it into your pie dish, ensuring the edges are slightly thicker to hold the filling well. Chill the crust while you prepare the filling to maintain flakiness during baking.
  2. Make the Filling: In a mixing bowl, combine the Brie cubes, cranberries, sugar, eggs, lemon zest, vanilla extract, and flour. Stir gently to incorporate all ingredients fully without overmixing, to keep the texture light.
  3. Fill the Pie Crust: Pour the filling evenly into the chilled pie crust. Smooth the top gently without pressing down so the filling stays airy and delicious.
  4. Create the Crinkle Crust: Lightly roll out a second pie crust and lay it over the filled pie. Press or pinch the edges with your fingers or a fork to form a crinkled effect. Optionally, cut small vents for steam release.
  5. Bake Until Golden: Bake in a preheated oven at 350°F (175°C) for 40-45 minutes, until the crust is golden brown and the filling is bubbly and set. Let the pie cool slightly before slicing.

Notes

  • Chill Your Dough: Keeping the crust cold before baking ensures flaky layers and a crisp texture.
  • Use High-Quality Brie: The creaminess and flavor depth of the cheese make all the difference.
  • Don’t Overfill: The filling expands slightly, so leave some space to prevent spills during baking.
  • Crinkle Creatively: Experiment with different crinkle patterns to make it uniquely yours and boost visual appeal.
  • Let It Rest: Allow the pie to cool before slicing for cleaner cuts and fuller flavor development.
