Ingredients

Scale

Vegetables & Aromatics

  • 3 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh or dried thyme
  • Salt and pepper, to taste

Cooking Fats

  • 2 tablespoons olive oil or butter

Broth

  • 2 cups beef or vegetable broth

Pasta

  • 8 ounces egg noodles

Cheeses

  • 1 cup grated Gruyère cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Caramelize the Onions: Heat olive oil or butter in a large skillet over medium heat. Add the thinly sliced yellow onions and a pinch of salt. Cook slowly, stirring occasionally, until onions turn golden brown and develop a sweet aroma, about 15-20 minutes.
  2. Cook the Egg Noodles: Meanwhile, bring a large pot of salted water to a boil. Add egg noodles and cook according to package instructions until al dente. Drain and set aside.
  3. Simmer with Broth and Garlic: Add minced garlic to the caramelized onions and sauté for one minute. Pour in the broth and add thyme. Let the mixture simmer gently for 5 minutes to meld flavors and reduce the liquid slightly.
  4. Combine Noodles and Cheese: Reduce heat to low and stir in the cooked noodles. Gradually add Gruyère and Parmesan cheeses, stirring constantly until the cheese melts and coats the noodles in a creamy sauce.
  5. Season and Serve: Season with salt and pepper to taste. Optionally sprinkle extra cheese or fresh thyme on top. Serve immediately while warm and gooey.

Notes

  • Take your time caramelizing onions to unlock their full sweetness.
  • Use freshly grated cheese for the best melting and flavor.
  • Reserve some pasta cooking water to loosen the sauce if needed.
  • Cook noodles al dente to keep texture after mixing with sauce.
  • Add fresh herbs like thyme or parsley just before serving for brightness.
