Instructions

  1. Prepare the ingredients: Clean and slice mushrooms evenly to ensure uniform cooking. Finely mince the garlic. Measure out miso paste and cream, having them ready for a smooth cooking process.
  2. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining to adjust sauce consistency later.
  3. Sauté the mushrooms: Heat olive oil or butter in a large skillet over medium-high heat. Add the mushrooms in a single layer, allowing them to caramelize without excessive stirring to develop a golden-brown crust. Stir occasionally until mushrooms are fully cooked and tender.
  4. Build the sauce: Reduce heat to low. Add minced garlic to the skillet and cook until fragrant but not browned. In a small bowl, whisk together miso paste and cream, then pour into the skillet. Stir gently, allowing the sauce to warm and thicken slightly.
  5. Combine pasta and sauce: Add drained pasta to the skillet, tossing well to coat each strand evenly with the creamy miso mushroom sauce. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
