Ingredients

Scale

Main Ingredients

  • 1 cup fresh or frozen corn kernels
  • 1 cup all-purpose flour (or gluten-free flour blend/cornmeal for gluten-free option)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped green onions or fresh herbs (cilantro, parsley, or dill)
  • Vegetable oil for frying (about 1/4 inch layer in pan)

Instructions

  1. Prepare the Batter: In a large bowl, whisk together the eggs, milk, and baking powder until well combined. Add the flour, salt, and pepper, mixing gently to form a thick batter. Stir in the fresh corn kernels and chopped green onions or herbs, ensuring everything is evenly distributed.
  2. Heat the Oil: Pour vegetable oil into a heavy-bottomed skillet or frying pan, heating over medium heat. Add enough oil to cover the bottom with a thin layer for frying. The oil is ready when a small drop of batter sizzles and bubbles immediately on contact.
  3. Fry the Fritters: Use a tablespoon or small ice cream scoop to drop dollops of batter carefully into the hot oil. Flatten them slightly for even cooking. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Avoid overcrowding the pan to maintain oil temperature.
  4. Drain and Serve: Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil. Serve warm with your favorite dips or garnishes.

Notes

  • Use fresh corn when possible for best texture and sweetness; frozen works if fresh is unavailable.
  • Mix batter just until combined to keep fritters light and tender; avoid overmixing.
  • Maintain medium oil heat to ensure fritters cook through without burning or being greasy.
  • Test cook one fritter to check oil temperature and seasoning before frying the rest.
  • Serve immediately for best crispness and flavor; reheat in skillet or oven if needed.
