Italian Grilled Cheese Sandwiches are a delightful twist on the classic comfort food, combining gooey, melted mozzarella and parmesan cheeses, fresh basil, and sun-dried tomatoes grilled between crispy rustic Italian bread. Perfect for a quick lunch, cozy dinner, or snack, this easy-to-make recipe bursts with authentic Italian flavors and satisfying textures.

Ingredients

Scale

Bread and Spreads

  • 2 slices rustic Italian bread (ciabatta or sourdough), about ¾-inch thick
  • Butter or olive oil, for grilling (about 1-2 tablespoons)

Cheeses

  • Fresh mozzarella cheese, torn or sliced (about 4 oz)
  • Parmesan cheese, grated (about 1 tablespoon)

Fresh Ingredients

  • Fresh basil leaves (a handful)
  • Sun-dried tomatoes, chopped (about 2 tablespoons)

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder or 1 clove fresh garlic, minced (optional)

Instructions

  1. Prep Your Ingredients: Slice the rustic Italian bread to about ¾-inch thickness. Tear or slice fresh mozzarella, chop fresh basil leaves, and prepare sun-dried tomatoes. If using fresh garlic, mince finely or have garlic powder ready for sprinkling.
  2. Assemble the Sandwich: Lay one bread slice flat. Layer mozzarella evenly over it, then add sun-dried tomatoes, a sprinkle of parmesan, and fresh basil leaves. Season lightly with salt, pepper, and garlic if desired. Top with the second bread slice.
  3. Butter or Oil Your Bread: Spread a thin layer of softened butter or brush olive oil on the outside of each bread slice to ensure a golden, crispy crust when grilled.
  4. Grill the Sandwich: Preheat a non-stick skillet or griddle over medium heat. Place the sandwich in the pan and cook 3 to 4 minutes per side, gently pressing with a spatula. Grill until bread is golden brown and cheese inside is melted and gooey.
  5. Serve Warm and Enjoy: Remove the sandwich from the heat, let it rest for a minute, then slice and serve immediately to savor the warm, melty cheese and fresh herbs.

Notes

  • Use day-old bread for a crispier texture and less oil absorption.
  • Grill on medium heat to allow cheese to melt thoroughly without burning the bread.
  • Press lightly with a spatula for even grilling and melting.
  • Mixing mozzarella with other cheeses like provolone or parmesan enhances flavor complexity.
  • Add fresh herbs like basil just before serving to preserve vibrant color and aroma.
  • For vegan variation, substitute cheeses and butter with plant-based alternatives and use olive oil for grilling.
