Instructions

  1. Prepare the Sauce: Mix soy sauce, brown sugar or honey, minced garlic, freshly grated ginger, and rice vinegar or mirin in a small bowl until the sugar dissolves to create the teriyaki glaze.
  2. Cook the Chicken: Heat a skillet over medium-high heat with a touch of oil. Add the chicken breasts or thighs and cook for 5-7 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  3. Thicken the Sauce: Reduce the heat to medium and pour the prepared sauce into the same skillet. Let it simmer for a few minutes until it starts bubbling. If a thicker sauce is desired, dissolve cornstarch in cold water and stir into the sauce. Cook until glossy and coat the back of a spoon.
  4. Combine Chicken and Sauce: Return the cooked chicken to the pan, turning to coat well with the teriyaki sauce. Let the chicken absorb the glaze for 1-2 minutes.
  5. Garnish and Serve: Transfer the glazed chicken to a plate. Sprinkle with toasted sesame seeds and chopped green onions before serving.
